Start brewing coffee in a moka pot.
Put sugar in a measuring cup.
When the first drops of coffee appear, add 1 tbsp to the sugar.
Vigorously stir/whip the sugar and coffee until a thick, light brown paste forms (espumita).
Once all coffee is brewed, slowly pour it over the espumita.
Stir and serve in small cups.
The espumita (sugar foam) is the soul of cafecito. Whip it aggressively until it's a thick, light-colored paste.
