Add water, coffee, and sugar to a cezve (ibrik).
Place on low heat — do not stir after this point.
Watch for foam to rise to the rim.
Remove from heat just before it boils over.
Let settle for 30 seconds, then repeat the rise once more.
Pour slowly into demitasse cups, keeping the foam.
Never boil Turkish coffee — it should rise slowly. The grounds settle in your cup; don't drink the last sip.
