Add coffee, sugar, and water to a briki (small pot).
Place on low heat.
Stir only at the beginning to dissolve sugar.
Watch for foam (kaimaki) to rise.
Remove just before boiling.
Pour slowly to preserve the foam.
The foam (kaimaki) on top is considered the most important part. A good kaimaki means a well-prepared cup.
